3-4 ripe avocados, peeled and chopped
5-6 roma tomatoes, chopped
1/1 cup red onion, diced
4 ounces crumbled reduced-fat feta cheese
3 Tbsp. red wine vinegar
1 1/2 Tbsp. olive oil
3 Tbsp. chopped fresh cilantro
Salt and pepper to taste
Directions:
Mix everything together in a bowl. I like this best prepared a few hours ahead of time to let all the flavors come together. Serve with baked tortilla chips or pita chips. Resist the urge to lick the bowl clean!
